Ingredients

  • 1 pound beef roast
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • 2 cups Pu-erh tea (steeped and strained)
  • 1 cup beef broth
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1 tablespoon soy sauce (optional)
  • 1 tablespoon Worcestershire sauce (optional)

Instructions

Step 1: Prepare the Beef

  • Preheat the oven to 325°F (165°C).
  • Season the beef roast generously with salt and black pepper.
  • Heat the olive oil in a large oven-safe pot or Dutch oven over medium-high heat.
  • Sear the beef on all sides until it forms a brown crust, about 3–4 minutes per side. Remove the beef and set it aside.

Step 2: Create the Au Jus Base

  • In the same pot, add the sliced onion and cook until it becomes translucent, about 5 minutes.
  • Add the minced garlic, dried thyme, and dried rosemary. Cook for another 1-2 minutes until fragrant.

Step 3: Combine and Simmer

  • Pour the steeped Pu-erh tea and beef broth into the pot, scraping up any browned bits from the bottom.
  • Add the bay leaf, soy sauce, and Worcestershire sauce, if using.
  • Return the seared beef to the pot. Bring the liquid to a simmer.

Step 4: Roast the Beef

  • Cover the pot with a lid and transfer it to the preheated oven.
  • Roast for 2-3 hours, or until the beef is tender and easily shredded with a fork.

Step 5: Serve

  • Remove the beef from the pot and let it rest for 10 minutes before slicing or shredding.
  • Strain the liquid from the pot to create the au jus, discarding the solids.
  • Serve the sliced or shredded beef with the au jus on the side for dipping.
