Ingredients

CRUST

  • 1 1/2 cups gluten-free oat flour
  • 1/2 cup almond flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1/2 teaspoon salt

FILLING

  • 1 cup natural peanut butter
  • 1/2 cup coconut cream
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup mixed berry jam (preferably homemade)

PU-ERH TEA JELLY

  • 1 cup brewed Pu-erh tea (strong)
  • 2 tablespoons agar-agar powder
  • 2 tablespoons maple syrup



Instructions

Prepare the Crust

Mix Ingredients: Preheat your oven to 350°F (175°C). In a bowl, combine the oat flour, almond flour, melted coconut oil, maple syrup, and salt. Mix until a dough forms.

Press into Tart Pan: Press the dough evenly into the bottom and sides of a tart pan. Prick the crust with a fork to prevent bubbling.

Bake: Bake for 10-12 minutes until lightly golden. Let it cool completely.

Make the Filling

Blend Ingredients: In a medium bowl, whisk together the peanut butter, coconut cream, maple syrup, and vanilla extract until smooth and creamy.

Fill the Crust: Spread the peanut butter mixture evenly over the cooled crust.

Spread Jam: Evenly spread the mixed berry jam over the peanut butter layer.

Prepare Pu-erh Tea Jelly

Brew Tea: Brew a strong cup of Pu-erh tea and let it cool slightly.

Mix Agar-Agar: In a small saucepan, mix the Pu-erh tea, agar-agar powder, and maple syrup. Bring to a boil, then simmer for 2-3 minutes, stirring constantly.

Cool Slightly: Allow the mixture to cool for a few minutes, then pour over the jam layer, spreading evenly.

Chill and Serve

Refrigerate: Place the tart in the refrigerator for at least 2 hours to set.

Slice and Serve: Slice the tart and serve chilled. Enjoy!
